炒青
炒青，是指在制作茶叶的过程中利用微火在锅中使茶叶痿凋的手法，通过人工的揉捻令茶叶水分快速蒸发，阻断了茶叶发酵的过程，并使茶汁的精华完全保留的工序。炒青是制茶史上一个大的飞跃。

1.炒青最主要的作用是迅速、彻底破坏酶的活性：
